So, it’s been a while since I’ve baked cookies- it’s mad hot here in Mumbai & a hotter kitchen is terrifying! This morning tho, I happened to stumble upon my darling cookie cutter stash ( yes, I have a whole bunch of ’em, extravagant purchases from X’mas ’13- also known as the Gingerbread Man/Cookie Era ) and decided to get a little crafty!
All you really need is a largish watermelon, a bunch of fresh mint leaves & the cookie cutter of your choice!
I then plunked the cut fruit chunks in a glass with torn mint & chilled in the ‘fridge!
Maybe I’ll drizzle a little lime or honey & toasted sesame seeds on ’em or maybe will just eat the whole lot as is 😀 Any way you look at it, just the pretty shapes’re enough to get you fruit friendly , this summer!

Refreshing with a punch is what I’d call this awesome salad! With the simplest ingredients it’s really easy to put together. Watermelon also happens to be my favorite fruit- and it’s available all thru the year! I’m going to have to try it tonight. Bring on dinnertime!
You’ll need to pull together:
1/2 teaspoon finely grated lime zest plus 2 tablespoons juice (from the same lime)
2 tablespoons brown sugar
2 tablespoons light rum
1/4 teaspoon salt
Chilled seedless watermelon ( pick out the seeds!)
2 tablespoons finely slivered fresh mint leaves
- In a large bowl, whisk together limejuice, sugar, rum, and salt.
- Using a melon baller, scoop melon into balls or cut melon into bite-size chunks. Add melon to lime mixture in bowl. Sprinkle with mint and lime zest, and toss gently to combine. Serve immediately, or cover and refrigerate, up to 2 hours.
