Warm brownies are generally an all time fave, but the chewier ones with a good measure of dark rum are a totally different story altogether! What I really love about this simple cake is that it is so easy to bake and yet so delicious & gorgeous to look at!!

All you need :
50 gms Dark Chocolate , chopped
100 gms Butter, chopped ( unsalted would be great )
225 gms Brown Sugar
50 gms Flour
2 tbs Unsweetened Cocoa Powder – if using sweetened cocoa powder, reduce the sugar quantity- simple !
2 tbs dark rum ( Optional, but why not?!)
Once you’ve got all the ingredients in place, you gotta:
Pre heat the oven to 170 C, line an 8” square baking tin with baking paper. This part is kinda tricky but a lot of fun if you’re into craft ! You may want to grease the tin before this so that the paper sticks to the sides. Set aside this piece of art- it literally is!
Put the chopped chocolate & butter in a heavy bottomed bowl & place over ( but not into ) a pan of gently simmering water. With a spatula, gently stir the mixture until smooth & super glossy! Be sure to get rid of lumps.
In another wider bowl sift together the flour, cocoa powder & sugar. Pour in the slightly cooled chocolate – butter mixture, add the eggs & rum – stir together all ingredients till smooth & lump free. Get an eager 7 year old to help out ( My niece loves this activity, especially coz it involves melted chocolate! )
Your Brownie Batter is ready!
Pour the brownie batter into lined baking tin & pop into oven for 30-35 mins.
Insert a toothpick into centre to test the doneness of brownie- it should come out moist but clean.
Now comes the toughest part- you have to let the brownie sit for 30 mins in the tin, till cooled.
Once cooled, cut the brownie into equal square wedges & serve with ice cream!! ( I’d just dive in with a spoon, tho )

2-At batter mixing stage, throw in chopped walnuts for a crunchy & healthy option!
3-Or you can add chopped mars bars or gems at the batter mixing stage! The brownie turns extra extra chewy & so much fun- kids (& adults) really dig this!
